Coins take 6 days to mature. They have a maximum weight at 12 days. Interest stops accumulating at 18 days. Start staking in about 7 hours and 29 minutes from the time you post (after you update to the latest wallet) so you can earn all your interest.

There is no way to speed up the confirmations for coinbase (PoW and PoS mining). Non-coinbase transactions are spendable after one confirm, unless the wallet is not in your control (like an exchange), then it's up to their policy. Mining payments therefore take about 18 hours after you actually mined the coins.
