does anyone know if there is a cap on how many sprouts will be minted and what that number is?

Sprouts keep growing and growing. No mintage cap.
That's your answer, it's a pretty slow progression so it won't ever reach crazy amounts like other coins, plus mining is still involved.
I have noticed a very tough competition to get PoS blocks as more people get involved. The inflation rate does not seem to be aggressive at all and the coin seems to adjust rather well for PoS minting, while still getting PoW blocks
