I would like to create an altcoin that can be easily mined with low CPU for educational purposes. Can anyone recommend a forkon Github ? Is CryptoNote a good solutions ?

There are already GPU miners for cryptonote coins.
If this is for educational purposed then I would fork a bitcoin clone. Recently there were two that launched with new algos. They are CPU only at the moment, until someone makes a GPU miner for it.
