We can't make our own Bitcoin or just "print" it because the blockchain doesn't allow for it, and that would massively devalue Bitcoin and make it next to worthless because it breaks the fundamental limit of 21m Bitcoins ever being in existence, and changing that would make Bitcoin no more different than other forms of fiat. Part of what Bitcoin is, is an appreciating currency, and thus you cause a large portion of the value to be lost.
