Also, would there be any way to turn auto-exchange on, but prevent some coins from participating? For example, I would like to auto-exchange Uro and Smartcoin, but I would rather not exchange DASH and ETH. Is there a way to enable this?

Currently, it's not possible.
The easiest way to accomplish this issue is making several accounts. One account to set auto exchange and the other account to not.
MiningPoolHub does not permit duplicate email or withdrawal address due to logical reasons.
As registering one more email, and withdrawal address would be quite messy to manage, so pool provides alias feature for each of them.
You can add '_' (underscore) at the end of email and withdrawal address, and they will be treated as alias.
For example, 'hello@example.com' can be your main account, 'hello@example.com_second' can be registered also. All mails will be sent to 'hello@example.com' for both accounts.
Same for withdrawal address. You can set '12DdmN1y5enL72sN93sisUWQdT1gfF24qj' and '12DdmN1y5enL72sN93sisUWQdT1gfF24qj_test' both. All coins will be sent to '12DdmN1y5enL72sN93sisUWQdT1gfF24qj'
This is not an ideal solution but helps making things simple.
MiningPoolHub would be too hard to configure when auto exchange can be configured for each coins. It would introduce unintended result for beginners.
Even now, I saw some people saying miningpoolhub's setting is too hard to learn. Someone told it as a nightmare
