Was a signed message given? If it wasn't, then who's to say that no user could simply fake emails (adjusting their date in an image) or did you request a video of them, fully showing the URL and navigating to the email in one take?
With full email headers, most emails these days have DKIM signatures which can be used to verify them to a pretty high degree of certainty
