I would advise you not to buy a whole Bitcoin in one go. I like you idea. Yes, this is a good strategy. Buy in small portion, observe the market then buy more if the dumping continues. So you are in a win-win situation and will not have a headache when the see the price falling. Also this is applicable when selling as well, don't sell in one big dump, just small portion of it.
