I personally think BitPay is one such great project. Hedging for the merchants instantly vaporize any risks and allows merchants to see bitcoin as another transactional tool which is what is most important - ubiquity.

The other is NFC enabled phones (and by extension apple allowing bitcoin based apps) but this is one such thing that is out of the bitcoin community's control.
