Where does changelly or anycoin purchase their BTC ?
I understand they differ from real exchanges by not providing a trading platform. They work more like an OTC.
How do they provide BTC in exchange for FIAT? Where do they buy (with FIAT) their BTC to sell it to us ?

I also don't know but I have an idea, I think the only possible way is to buy
BTC before the company started playing exchanged, they just holding their funds even if a lot of person need
BTC they have a plenty of it let's just say 1000
BTC before starting a merchant.
