In my opinion, the most safest way of selling bitcoin is by peer to peer, or personal. Meet the person personally and do your transactions with him/her. This is the best way to quarantee the safety of your bitcoin when selling it. Do it in a public place with witness. This is applicable if your customer was near in your location. So once this is not applicable then you need escrow for your safety.
