Why ?
Did you change the Derivation Path to look for "change" addresses? Perhaps the address/key that you cannot find is a change address... I'm not sure what Derivation Path you're using, as I'm not overly familiar with Copay, but if you change the last number from a 0 to a 1, you "should" generate the change addresses for that system...
For instance:
Receive Addresses: m/44'/0'/0'/
0Change Addresses: m/44'/0'/0'/
1Try that and see if you can find the address/key that you are missing
