Also if I add more nodes to the config would I get more active connections, currently I have 16 and it has been like that since I started but I've heard some people have over 100, does it affect the time you stake your coins? And if I were to have the wallet open for 2 days and I closed it and opened it back again does it restart the stake and have to start all over again? Thanks!

I staked 2200 coins in 38 hours, got 1550 more as a reward. The more you have the higher the stake reward frequency, so if you have a low amount (a few hundred) coins it will take many days for the reward to happen. But, you will get a very big reward. You get 27% per day, regardless if your reward comes daily or once a month
