I haven't ever powered an S7 or S9 with them, to be completely honest, but I would chose to use 3 and link their "load balance" connections. User "sidehack" on the forums is the designer of the conversion board, and he can probably confirm. I think the most important thing is that the "leader" power supply (the one that comes on first) is connected to the controller.
