As far as I know your shop will be on your site and utrust will act as a payment processor in between.
I also understand it like you did. Many people compare it with paypal that's because I think it will be more like paypal than ebay.
Yes it is the paypal of cryptos, but better because is on cryptos and also it will accept fiat, plus the protection of funds if you use cryptocurrencies or fiat, its a better deal than paypal, if we consider the lower fees, it would be better to have utrust than paypal, but for now both will be good to have, until cryptos becomes mainstream.
The idea is good, but wouldn't say it better than Paypal since they're light years ahead of Utrust. As I understood you need ETH as a gas if using this/sending tokens so imho it doesn't feel very convenient or what do you think?
