I've only ventured into the ERC20 space (MEW) and don't have much knowledge around which other wallets to use for non-ERC20 coins/tokens.
Any advise?
I'd rather keep the number of wallets I hold minimal, and I don't want to go with a hardware wallet (yet
)

Usually all tokens are erc20 based coins, there may be few or none such coins in the market which does not have erc20 support.
However, every coin has its own waller, if you have achieved such coins, you can hold them in respective wallets.
