I imagine that this must be done using the console, but I can't find the right way of doing it

The way I've backed up wallets in the past is just to close the wallet, rename the current one to 'wallet.dat_old' or something to identify it, copy the backup wallet.dat file to the correct folder, re-open the wallet and it should be fine... Backup should be restored
