1. How many coins do you need to receive stakes?
2. When you download the wallet do you need to do addnodes and join a pool or can you just let it sync then buy coins and start staking?

As you know very well, the more the better.
I started with 10k and it took 7 days to get a reward, but it depends on the network weight.
I bought more since, and keeping stack size of 10K+ and it seems staking every 3 to 5 days.
You may need no conf file to add nodes but you can create the file and add nodes if it does not auto-sync.
The stake percentage for Go is probably higher than 808, but 808 is so cheap to buy many more coins thus you can get more rewards.
