Is it best to start staking this token just before the 90 days have expired or as early as possible?

it depends if you have good amount every 3 days is more profitable because you always stake with the reward you got from 3 days ago.
it only depends on the amount you have now so you get your eth fee back.

Is there a way to set it to automatically stake every 3 days or is that something that must be done manually?

Yeah, like many people thinking about POSToken - another project to grab money from a community into dev hands.
