You have the freedom because you can spend what you want and what you want to buy with it. If you buy a car with your bank account sometimes the bank will ask you questions.
So they are the owners for your money while with bitcoin you are the real owner of it.
This is true but the problem is that we do not have arrived at the point where you can buy cars and big purchases like that, there are some people that have done it but that is more the exception rather than the rule, but I think it is possible we arrive at that point in the next 10 years since the adoption of bitcoin seems to be accelerating around the world.
