I was staking coins nearly every day from about November 6th to December 24th, but have now gone since December 24th without staking. I'm wondering if anyone else is seeing a drastic drop off like this

Yes, I believe you are correct.
I have posted several times about the staking issue and only discovered that there was a version 4.1.1. yesterday; there had been no announcement!!
I installed the new version and unlocked for staking. This now works as expected and I have staked several times now.
Upgrade today and all will be well.

So, I went two weeks without staking while on 4.1.0, but about 12 hours after upgrading to 4.1.1, I am staking coins again. There must be something to this, so I'd suggest you upgrade if you haven't already
