If I buy a large amount of tokens during an ICO and want to sell them on EtherDelta after the ICO ends, will there be many buyers to buy the tokens for unlisted tokens from your experience or am I stuck till listing on centralized exchanges??

You will be stuck until your token will be listed in the better exchange site rather than etherdelta itself. If you are trading with contract address in etherdelta and there will be no a lot of demand to give a support to the new market. I suggest you talk with your developer to listed your coin in a better exchange site rather than etherdelta itself.
