This looks like a good project but lets say this coin goes up to $10 in a year or two. What happens to this coin/MN when the miners disappear due to the increased difficulty and decreased reward?

The fact the price goes up would usually mean the value of the network has gone up.  Miners will not disappear.  In fact, more miners will jump into it to mine as the price has increased.  InfiniGuard will retarget the difficulty such to find a balance between the reward and number of miners.  We would expect many more MN to come in when the network has more value as well.  Likewise, the reward is a function of price and number of MN out there.  On top of that, transaction fees derived by our application on top of Inifinex will be distributed back to MN holders as well.
