came back this weekend from vacation to a Grub Rescue prompt 
Can't seem to fix it and not quite sure what to do (granted, I am TERRIBLE at Linux). Any advice? If not, can I completely re-install and then copy some files over to get back to my original rig configuration easily?

Very simple just put the image back on the stick and boot it, it will ASK for your rig id and password an all your settings come back.
