What are the advantages of using omise as a payment platform?
Say I'm a coffee shop and I deal in cash, crypto, and credit cards.
Why would I want to use omise compared to PayPal, square,etc

Good question. I was under the impression that OMG is more than just another currency, but if its just used for payments then it is entirely replaceable and wont be an essential part of a good crypto portfolio.
