It is never one or the other. In crypto it is essential to diversify (smartly). Having said that, today ETH has wide adoption and most projects are based or built on the  ethereum blockchain. EOS has not even launched mainnet yet and who knows if it will ever be adopted at the same rate than ETH has. And it currently has, in my opinion, a really high valuation, not justified. But you never know.
