I use Binance as my exchange and was wondering if USDT was a good place to hold funds between paying and selling.  Thanks!
You mean buying and selling BTC as in trading for profit, right?

I suggest you if you have a local exchange better to exchange your coins into fiat so that your funds are safe, but you can be still used USDT as an alternative, but it doesn't mean that tether is safe.
he needs a medium to store value before his next trading/buying BTC, and in this case USDT is one good option
another possibility is by exchanging BTC for another strong stable altcoin of his preference
trading extensively BTC for fiat is cumbersome and very costly, I would agree with this if he needs to store it for months ahead
and not all exchanges have BTC/USD fiat trade pair available
