MissExchange I have a lot of respect for people trying new crypto related things and standing up trying to make a difference pitted against very big business (in this case exchanges) so wishing you success in your business. Your cloud set up is good to start with (8GB RAM, Quad Core) and as you said you will scale if or when required.
A little advice:
1. Please consider changing your logo, it is not nice at all. Use Photoshop and create something better
2. It seems in order to make the home page fit responsive you removed the oprntrade home page graph but that large void empty area in the centre looks very bad, try adding something else there
3. Since there are so many empty orders for buy/sell those boxes at the footer should not be there or be replaced. Instead of using the opentrade template as-is why not change it with simple modifications to improve it
4. Maybe you started with too many coins and pairs. Consider removing them and concentrate on building your business slowly upwards with coins that have a community not cheap uselesss ones
I have not looked beyond that at your site but wish you success. I still think the meanxtrade template simply has a better layout UI.

Gladly appreciated for feedback
1) Will make a new logo in coming days and make improvements.
2) Will do some frontend updates and will look into this aswell.
3) We are doing some delisting now, and as you said i will concentrate on more reliable coin pairs to get some trading volume.

Delisting is required for those coin which are dead because of not being traded on your platform. Try to add those coins which have a bigger community and are looking for the exchange listing. If you will add the coins of high potential first from the remaining then the community of that coin will come to adopt your exchange.
