WHICH exchange rate will customers expect to use? seems like everyone is quoting different, sometimes dramatically different, rates at the same time.
I plan on holding them as BTC for future btc purchases rather than turning to cash daily.

That really is up to you and what the market will accept. I think the Mt.Gox 24hr. average is a reasonable choice, but you could also make a case for the rate at an exchange you use. In any case I'll definitely stop in if I'm in the area. I don't think I would miss it from the road.
