We can not just mention one factors that caused the unstable price of bitcoin, because in reality, the price of bitcoin is involving many factors inside it. But, i think, the most things that caused the unstability of bitcoin's price is the amount of supply and demand. but the only one things that cause bitcoin to go up and down is from supply and demand. so far, when people become panic to see the price is down, they will sell all of their bitcoin and the other side, there will be many people that will get the chance to buy bitcoin at the lower price because of people panic. besides that, the other reason for bitcoin prices to go up and down is that of the news that comes to us and people are not thinking and research about the truth of the news so they become panic.
