I have taken part of some ICOs and everytime their token price goes down after the ICO.. why is that so?

Becaue there is a gap between actual end of ICO and launch of the first version of project. In this gap, there is almost no demand for tokens on market.
I agree, many ICO's wait a long time to launch their MVP product, or at least the Alpha version of their product. They list their tokens in exchanges, then people and whales dump their prices, after that, they launch their product, but it becomes without any importance, because whales who bought a huge amount of tokens, will manipulate the price.
