Do I have to destroy a token in order to receive "dividends"? Does this mean that dividends can only be received one time? Why is it done that way?
Yes, that's right. It is done that way to maximize the price of the tokens. Selling a token backed by accumulated ETH profits is more profitable than just receiving dividends. So, for the holders of tokens (us and, possibly, you) this is the best solution.
