When I was a beginner, I went to Coindesk's A Beginner's Guide to Blockchain Technology[1]. It was ample information for me to get a grasp on what bitcoin and blockchain is. If there are newbies asking basic questions here on Bitcointalk, that's the guide compilation I've always suggest them reading because it has good amounts of content to cover the basics.
Also, what do you enjoy/ find yourself researching or learning about the most? Why?
Err. Nothing too specific. Mostly just bitcoin; and a few altcoins here and there that I'm truly interested in(regardless if I'm invested or not). Why? They simply fascinate me a lot.
