They will continue their current path and then wait for you to come online again and give other orders.  However, they can be killed in the mean time obviously by other players if they want to do it, and don't leave them in the spawn area (and also don't send them back to the spawn area to cash in and then go offline, as your hunters will be killed in the spawn area if they stay there longer than 30 blocks).
