Here's my dumb question for anyone: If I set up (pool account, config) and start up before launch, will my miner connect and kick in at launch? Or should I wait until launch before setting it off?

Yes it should do as long as you have worker setup and password correct etc.

Don't blame me though if it doesn't !In CGMiner if u use a fallback it will definately auto connect. Itll run your fallback pool til it scans your primary pool (mint.dogemoon) and sees that its working - at which point itll join and hash away.
Something like:
cgminer --scrypt -o stratum+tcp://mint.dogemoon.com:3333 -u xxxxx.1 -p x --failover-only -o stratum+tcp://dogeu.nut2pools.com:5585 -u xxxxx.1 -p x
