I wonder when (if ever) cryptopia will be back fully functional so I will be able to withdraw my ONION (and buy more) btw what is the best way to store medium-large amount of ONIONs?

The safest way to store ONION is when you have full control. If you are not interested in staking, you don't need to run and maintain the wallet. Start a wallet, get an address and send ONION from any exchange to that address. Don't forget to backup that address properly. I recommend to backup both wallet.dat and the private key:
