Not only the opponent might have better cards, but he\she can win with
any cards if they are lucky. I play poker a lot, and I've seen many times when someone with pocket Aces loses to a bluffer with, say, 7 and 8 unsuited, because there, actually, can be a lot of such outcomes. For example, in 10-player Texas Hold 'em the probability of winning with pocket Aces is just 31.36%, in the case all 10 players stay in until the end.
I also practice this pattern, mentioned by @mitchr4, sometimes. If I win 3 times more than the money I was entering with, I leave the table, at least for a while.
