I was wondering if it would be advisable - because I know it can be achieved without much trouble - do host the wallet files on an external disc drive.
Will it stress particularly the disc drive in question?
Will there be any latency due to this?

Mostly there won't be any problem at all, and speed of the wallet not depend too much on type of hardish or ssd, or even speed of internet when it synced. Just make sure to keep the private key carefully. And sometimes, external hardish would likely to break, but you just need to keep private key to recover it.
