I always liked the KuCoin exchange, but it was always somehow unlucky. something was missing. I could never understand why they have such a low trading volume.

Yes, we might see that some coins listed in KuCoin have low trading compared to the others (Bittrex) but not just we look for in a certain exchange. The most important is our funds is really secured. KuCoin exchange did great things this year and even listed a lot of coins this means that it consistently be growing and moving its volume as well. And that is pretty amazing to look by.
Most of the coins on KuCoin don't even have extremely low volume except for the least known pairs on the site, and the exchange's volume is overall greater than that of Bittrex by far, though most of that volume's concentrated in pairs like BTC/USDT and ETH/USDT. Pretty decent site if you're trading on the larger pairs, though as for the security portion of things you shouldn't be counting on the exchange securing funds properly too much as accidents do happen. Always keep funds you're not actively using or plan on using off-exchange.
