WOW, looks cool. What a pity that I didn't see this before. To tell the truth, I was searching for a new knife some years ago and this topic would be actual for me. Fortunately, I discovered for me a popular Japanese kitchen knife of the qualitative stainless steel and I forgot about all the problems linked with the sharpening of it and sliced products. Indeed, it economizes a lot of time and makes cooking easier when you have professional equipment in your kitchen.
