First, I get that everything is going by USDT values on the market now, and was able to buy some hashrate, but I remember the payouts starting to sprinkle in fairly quickly. So far I've not gotten any ZEC at all despite Antpool showing a bunch of mining going on. What gives?

Yes. Payments was freezed during relocation/upgrades and it was about 3 times for last three months for 1 to 2 weeks each time
The old system had a way of showing your contribution shares according to your hashing power and the equivalent payouts and maintenance fees. Do they still have that hidden somewhere?
Here exists some graph like it was previous but i think is based directly on AntPool profits logic. It's still not so clear for me. Sorry.
Also, what happened to the coin exchange markets? Are they gone or moved?
Old one was removed and new one was promised but still not presented, We all are waiting for it.
