You're correct that bookmakers adjust their odds according to how much they take on each outcome so technically the customers always decide the odds. The big difference is what happens when someone makes a large bet. An individual bookmaker wouldn't adjust his odds for that he would just lay part of it off with other bookmakers. With parimutuel betting, it stays in the prize pool and makes the other outcomes more attractive.
Yeah, that is what I like about this place as well because even though there are plenty of times when you wager on regular expected odds and all, there are a lot of times when odds are better here as well, some people just bet big on the team or person or whatever thing that wasn't favorites which makes the odds for favorites a lot better than other places.
I don't know if there is one right now but let's say a team has 1.70 odds at almost everywhere, or around that level, sometimes you can see as high as 2.20 here for some reason, just because the other side got a huge bet from someone that increased the odds. That is something we as gamblers can take advantage of and make it a profitable thing by basically "arbitrage" our bet if that is even a word for this.
