Some threads have icons in their topic, was wondering how they got to insert them? I copy-pasted the moon icon in this subject, but does not seem to work..

Your moon icon does work. I can see the icon on your thread title.I think copy paste is the only way to do that. there is other option 🎩✨🎉🎃🏀🎀🎗️🎀 use mobile to post before creating a topic and you can add other icons you like.
