I think most of that volume is bot stress testing, so they can push the lightning network more and see what it is capable of. This also allows them to show that lightning can scale.
I can attest that, at least so far, volume has not affected the speed of LN swaps in any way.The busiest 24h trading volume days guaranteed swaps that were just as fast as the slowest.
