All the transaction history etc is stored on the blockchain... unless the blockchain disappears or you lose access to your private keys, then your coins are going to be just fine As far as the private keys are concerned, as long as you have your 12 word Electrum seed (or a copy of the wallet file and the wallet password), you'll be able to recover those.

It might be a bit of a hassle, but have you considered upgrading to Windows 10? While the offer "officially" expired... I am fairly certain you can still get the upgrade for free. (note that the story was revised in Jan 2021!)
