Binance is the number one exchange in the world of cryptocurrencies.

You cannot trust Coinmarketcap and expect everything related to Binance will be updated even if there is something negative because they own the website as they purchased them from the old team for $400 million.For me it is also like for many, besides that it has the best score: https://coinmarketcap.com/rankings/exchanges/
I don't see any exchange outgrow it for a long time, as it is constantly updated to have the best products from a good exchange...
You never know, some of the major traded countries have banned Binance and asked to comply with the regulators but instead of complying they ran away and how long they will be running and Binance exploded into the scene recently and you will see another exploding like that which is willing to comply with the regulators and it is possible that it will surpass Binance as well 
.While you are right that their ownership of the website could lead to some skewed statistics, I think they have put a lot of effort into the website to have a decently accurate picture of the current industry. When you check data about Binance I would say it is about right. Do you know someone who is in crypto and doesn't use them?
Everybody uses Binance.
