100x at this point is extremely difficult, if not impossible. There are countless meaningless and crappy coins out there, you have to analyze and choose them to find the beef. Defi? Only part is good, the rest is paradox for inflation, manipulation and trash, fraud (carpet pulling, pump/dump). Is NFT realistic? There are many new promises but it takes time to test its significance. anyway, we need to work and hopefully rummage through everything to find it 
I do believe that 100x is not that uncommon in crypto world, sure it is not common neither but it is not something super rare neither. What you need is a token that is brand new, includes all the new hyped things, and a big bull run.Like for example during February to march this year we have seen so many things do a 100x in 3 months, why? Because they were timed perfectly, they included many new things and it made a lot of people money at start so more and more people joined it as well. That is what you need, can it happen now? It can't, because we are not in that market right now, but in the middle of a huge bull run like we had this year if you create a project with all kinds of brand new hyped things then you could have 100x quite commonly in the new part of the crypto world. That is of course only if the project owners are not scammers and actually work on it.
