There were many pages discussion about Roobet KYC here on the forum also and some were against even level 1 KYC at that time but it was said that if they don't like it they can choose some other casino and yes there are completely anonymous casino aslo and they can play over there but some slot could not be available there so look for that.But it's your wish which one to choose or not at last.
That discussion was just ignored by roobet and like you said it was more like a "take it or leave it" situation. Interestingly I did both a bit. I never liked sharing my KYC with a casino, it never felt right and no matter what they do, it never really makes it worthwhile to have something like that.
So, I ended up leaving it for a while, didn't come back for months, then I ended up saying what could happen at worst and I decided to join back in and that really helped me get courage back up and shared my KYC, played here for a while and now left again. It just doesn't make sense that a casino would force you to give your information. They could give any reason they want but it is never truly enough to justify it in my mind.
