So is there anything like a decentralized exchange for Bitcoin where you can get current market price and exchange stablecoins with Bitcoin with other people? Or any other good buying option that preserves privacy?
Have you tried bisq or hodlhodl?
You can do your research on what stable coins (I don't think there's any on bisq) are transacted on either platform, and the fee is a certain percentage of the total transaction, about 1% (+/-)
Your privacy is somewhat preserved as it's a peer to peer platform.
You'll however still have to take necessary precautions, like using a coinmixer if you don't want the source of the bitcoins to be traced and practicing safe browsing.

I just don't want a link between the payment and the bitcoin I would be receiving. Like if I can pay with stablecoins (which could be tracked as being mine, from whatever exchange I get them on) to someone and I get their Bitcoin I figure there is no link between the stablecoin transaction and the bitcoin transaction, right? So any analysis tracking would go dead at the point of that stablecoin-for-btc exchange. I don't really care about the source of the Bitcoins being traced, as bitcoins are fungible and traded around constantly, I just want the privacy of not having the bitcoin I'm buying and holding traced to my account from an exchange.
