One of the only issues I see when comes to your idea is the source of renevue for the casino itself.

One option it could be to charge a fixed amount to each player the join the match/table and the winner keeps around 80-90% of that money from the others players (their foes) while the casino keeps the rest 20%-10%.
I am personally not sure how attractive this idea would be for the gamblers and the casino, though.
