What happens, when I change btc into USD fiat. Where does the Fiat go?
Do I have to give the nomber of my bank account first, before I make the swap?
Does then the other person directly send his fiat to my bank account?

Typically, you must use an Exchange - Like Coinbase for example, or Kraken, Bitstamp - It depends on your location really.
You send them BTC, exchange it for FIAT, then you can withdraw the FIAT to your Bank account number, so never give your account number to anybody but a trusted exchange for your country.
